Nerano Beverly Hills, the iconic Italian restaurant, announces a new era has arrived with the appointment of Executive Chef Sam Mumford, a revamped menu, and a tasting experience in celebration of National Pasta Day, running October 13–19.

Recognized by San Pellegrino as one of the "Top Young Chefs Under 30," Chef Mumford, 28, brings a powerful blend of Michelin-starred technique, soulful storytelling, and California-seasonal sensibility to Nerano. Raised in the farm town of Lynden, Washington, Mumford honed his skills at top restaurants including Pasta Bar, Gwen Butcher Shop, and Koast. His approach is grounded in authenticity, sustainability, and the belief that a great meal can forge lasting memories.

To commemorate National Pasta Day on October 17, 2025, Nerano will debut its first-ever Pasta Flight Tasting Menu — a three-course journey through handmade pasta creations by Chef Mumford, available October 13–19. Designed for guests who want to taste it all, the flight includes:

Artichoke Ravioli (charcoal dough, shallots, burnt onion) – velvety, rich, layere

Spicy Vodka Paccheri (salsa rosa piccante, parmigiano reggiano) – bold, nostalgic, cheeky

Mushroom Pappardelle (chianti classico, chanterelle, pecorino) – earthy, comforting, deeply satisfying

Guests can elevate the flight with curated Italian wine pairings, indulge in tableside martini service, or add fresh shaved truffles for an extra flourish.

The new menu at Nerano reflects Mumford's dual passions: soulful Italian classics and seasonal California creativity. While signature favorites like Linguini alla Nerano remain, new dishes include:

Beef Cheek Agnolotti – with braised cheek, jus, polent

Amberjack Crudo – leche de tigre, pickled fresno chil

Tuscan Lamb – rosemary, balsamic, Dijo

The Jane Salad – charred radicchio, arugula, goat cheese, pine nuts

In a first for the restaurant, Nerano is now offering a signature dry-aged Wagyu Burger, served on a toasted brioche bun with melted provolone, crispy onions, and house made aioli — a dish that's as indulgent as it is unexpected.

This new chapter is fueled by hospitality innovators Oliver Clowes and Roby Podeyn of Counter Culture Hospitality, whose team brings experience from acclaimed concepts including Funke, La Dolce Vita, and Sushi by Scratch Restaurants. Their approach emphasizes intention, inclusivity, and creativity — with an eye toward redefining what elevated dining can feel like.
