American actress and model Olivia Culpo joined Executive Pastry Chef Chris Ford and floral design company Square Root Designs at the Four Seasons Hotel Beverly Wilshire to learn the secrets behind making the perfect Christmas treats and decors.

The social media sensation celebrated the Holiday season while gathering some tricks to showcase with her family and friends back in Rhode Island.

Next, preparing the perfect French Macaron with Chris Ford, Executive Pastry Chef at the Four Seasons Beverly Wilshire Hotel in Beverly Hills.

Ingredients:

371 ½ Grams of 10x

371 ½ Grams of Almond Flour

144 Grams of Egg Whites

157 ½ Grams of Egg Whites

420 Grams Sugar

150 Grams Water

Method:

  1. Robot Coup together the almond flour and powdered sugar.

  2. Place in large bowl with egg whites, mix on low speed to combine.

  3. Pour water into the bottom of a medium saucepot; pour sugar directly in the center without letting any granules to touch the sides of the pan.

  4. Bring sugar/water to 248f.

  5. When the sugar /water hits 235f, begin whipping the egg whites on medium speed to obtain a soft meringue.

  6. Once the syrup reaches 248f remove from heat and pour directly into meringue. Whisk slowly.

  7. Whip meringue on high speed until cools down to room temperature.

  8. Once the meringue is room temperature take 25% of the meringue and incorporate into the egg white/dry mixture to make a paste consistency using the Kitchenaid.

  9. Transfer this mixture into a large bowl and add the remaining meringue.

  10. Using a spatula fold the mixture together to incorporate evenly.

  11. Beat batter with spoon just enough so it deflates flat and will not leave a “tail” when piped.

  12. Line flat Sheet trays with oil and parchment, making sure to relieve any bubbles formed.

  13. Pipe with tip 10MM.

  14. Allow the macarons to dry until a skin has formed and a dent is formed when touched with a finger.

  15. Bake in oven at 315 for 11 minutes.

  16. Fill same day as producing to ensure the perfect consistency once finished.

 

The beginnings of the perfect holiday centerpiece start with the base of greenery which will extend beyond the frame of the bowl. Adding in the center of the greenery we have roses in red and white. Add a few sprigs of mistletoe and holly or even a touch of the more fragrant Balsam fir and the centerpiece will be both beautiful and aromatic, filling your home with the scent of the holidays.
